Light Saber Battle Cake + Recipe for Marble Cake


I’m not planning to attend the premier (no baby sitter + I hate lines + midnight is late) but I’m definitely planning to see the movie sometime soon!

In the meantime, here’s a Star Wars cake!  This is a marble cake (recipe below) covered in Chocolate MM Fondant.  I used white food coloring mixed with vodka to paint a star burst.  It took 4-5 layers using 3 different paint brushes (starting with a large brush, ending with a small one) to achieve the final look I was going for.

Then, I found a still shot of the epic Luke Skywalker vs Darth Vader lightsaber battle from The Empire Strikes Back and printed it out.  From there, I used it as a stencil to cut Luke & Vader out of more chocolate MM fondant.  Lastly, I made a colored light saber for each and added a glow around them.  And of course the epic Star Wars quote!

Eggless Sugar Cookies

My boys love to take cookies to school during the holidays.  This year, however, there is a child in Spud’s class with an egg and nut allergy.  Not wanting to leave someone out of the fun, I went searching for a sugar cookie that everyone could enjoy!

In this recipe, a little sour cream is added in place of the eggs.  I found the dough to be quite stiff.  In fact, it almost looked like it wouldn’t come together!  Thankfully, the dough will come together with a bit of patience.

The cookies cut out beautifully and spread very little, leaving a very consistent shape (which is always nice when decorating!)

Because Royal Icing uses merengue powder (which has powdered egg whites), I called on my mom for her favorite (and oh so delicious) sugar cookie frosting recipe! 

This frosting is perfect for decorating with children (you can probably tell that Spud decorated most of these and I love them!)  Though it’s made with cream cheese, it will dry hard overnight.  The sugar stabilizes the cheese, so you can leave them out.  We’ve been eating these cookies for years, and no one has ever gotten sick.  Though, if you’re really worried, go ahead and store these in the refrigerator.

So the big question: how did they taste?!?

With the new Star Wars movie coming out, the demand for Star Wars cakes is higher than ever!  For this Star Wars fan, it’s a dream come true!

Though R2D2 has always been my favorite, I do love Chewbacca, too (especially after reading William Shakespeare Star Wars!)

Gingerbread Houses 2014

You’ll notice only 3 gingerbread houses in that picture.  That is because my house absolutely 100% would not stand up.

Give Thanks Cookies

Each Thanksgiving, I’m in charge of the place cards.  For the last several years, I’ve made place card cookies (see here and here)!  They’re a unique and yummy treat!

These are actually last year’s cookies that I never got around to sharing. 

I’ve found that in addition to the typical fall colors (brown, gold, & orange), I love to add a pop of purple into my Thanksgiving designs.

Shark Cake + Cinnamon Life Chocolate Cake

Spud turned 5 in August.  He was set on a Paw Patrol cake for nearly the entire summer.  I had a cake sketched out and bought a toy to use as the topper.  I was prepared.

Then, two weeks before his birthday.  Boom.  Paw Patrol is out (Mom, I don’t even like Paw Patrol….whaaa?), and he’s suddenly obsessed with sharks and wants a shark cake.  And not just any old shark cake.  It needed to be a vicious looking shark with lots of teeth.  And he had to have pilot fish around to clean his teeth.

Mickey & Minnie Smash Cakes & Cupcakes + Dairy Free Oreo Cake

This sweet little smash cake/cupcake combo was for a 1st birthday bash for boy/girl twins!

The Minnie cakes were Strawberry Sour Cream cake with Cream Cheese frosting (delish!).  The Mickey cakes were dairy-free Oreo Cake with Dairy Free Chocolate Frosting.  And it’s not actually black!  I used special dark cocoa powder for the frosting, which is such a dark brown, it can pass for black – perfect for a baby’s first cake!

Sorcerer’s Apprentice Candy Bark Bites

As Spud was helping me make my Melted Witch Candy Bark Bites, he asked me if the witches were boys.  I said, no, girls are witches and boys are wizards.  Then he wanted melted wizards too.  He asked if I had any purple to make some wizards.

But I didn’t like the idea of melted wizards.  How did they get melted?  Is a lab explosion plausible?  I can’t think of any wizards that melt from water like the Wicked Witch.

Then I remembered the Sorcerer’s Apprentice.  It’s the little section from Fantasia where Mickey steals the sorcerer’s hat and bewitches the brooms to carry his buckets of water.

Little Ghosts and #GoBoBakeSale

It's almost October!!  It’s time for Halloween cookies!

First off, I have this set that I made just for fun!  We have bold colors cute little ghosts (Spud called them baby ghosts) and, of course, Ghost Vader.

For the cookies, I switched things up this year and used this chocolate cookie recipe from LilaLoa.  The only change I made was to use special dark cocoa powder.  That’s right!  No food dye in that dough!  They’re very dark brown from the cocoa powder!

Rainbow for Girls Cake

Today’s cake was for a Rainbow for Girls Celebration.  I don’t know a lot about the organization, but I know that it is an opportunity for young girls to learn leadership skills and work within their community.

This cake presented a unique challenge, because there was a lot of important elements that needed to be incorporated into the cake.  The challenge was how to make seemingly disparate elements all come together for a cohesive cake design.

Dinosaur Gender Reveal Cake

I’ve always wanted to make a gender reveal cake, but I never found out the gender of my own kids before they were born.  And so far every baby shower cake I’ve made (there aren’t that many of them) have also been for mamas to be who don’t know gender!

But last June, I got together with some of my college friends for girl’s weekend.  And one of them was expecting.  And while she already knew the gender and had shared it with her close friends and family, I took the opportunity for a mini reveal!

I should back up a bit and mention that this is the friend who ordered the Game of Thrones/Harry Potter Mash-up cake for her and her husband’s (then boyfriend) birthdays.

This couple also ordered the Golden Snitch Wedding cake when they got married.  Also at their wedding, one of their readings was A Lovely Love Story:

Harry Potter Hockey Mashup

Today (July 31) is Harry Potter’s birthday.  If he were real he’d be 35!  That makes Harry Potter older than me and I have to say – I’m ok with this!

My friend’s son in a huge Harry Potter fan, so for his 7th birthday, asked for a cake that incorporated two of his favorite things: hockey & Harry Potter – a bit of a challenge!

Thankfully, I had Hubs on deck as my Artist in residence and he immediately sketched up some Quiddich players sporting hockey gear!

After that, this became one of my favorite mashup cakes ever!

Minion Cupcakes & Lemon Cake

Who loves Minions??

I loved the minions in both Despicable Me movies, so when my son’s Cub Scout pack asked me to make minion cupcakes for their Blue & Gold Banquet, I was thrilled.  The theme was “Cub Scouts are One in a Minion.”

It was such a cute theme with some cute patootie minion cupcakes to go along with it.

The cupcakes were lemon cupcakes baked in blue cupcakes liners (recipe below or click for a gluten-free version and a boozy version).  They were lightly frosted in buttercream and then topped with MM fondant.  I had such a blast making the faces and giving each little minion his own personality!

For these cupcakes, I took a more minimalistic approach add a blob of green buttercream for the turtle head with a little MM Fondant mask – with coordinating cupcake liners, of course!

Asteroids Cake

Who remembers the game Asteroids?

This year, my husband wanted an Asteroids cake for our combined birthday party.

I attempted to recreate the feel of the game console using a sheet cake with an angled round cake placed on top.

The cake was a Rich Chocolate Cake with Chocolate Frosting (tinted black) with a few MM Fondant details.  I made the Asteroids and game score out of piped candy melts, however they broke so easily, that I’d use Royal Icing next time.

My own background is in elementary education, so I have first hand knowledge of all that teachers do on a regular basis.

Gluten-Free Lemon Cake

Recently, I’ve been making more gluten-free cakes for friends with special dietary needs. 

When I first started, I simply picked up a box of gluten-free cake mix and made it as is.  It was ok, but not spectacular.

Then I started to try other gluten-free brands and picked up a copy of The Cake Mix Doctor Bakes Gluten-Free .  If you’re starting to cook gluten-free for yourself or for someone else, I can’t recommend a better resource.  It’s full of tips and tricks and includes a section titled “How to Bake Gluten-Free in a Gluten-Filled Kitchen”  (note: I’m not being compensated in any way for my review, I’m just really impressed with the book.  If you click the link, I may be credited through Amazon if you choose to purchase).

Once I got more comfortable baking gluten-free in my gluten-filled kitchen, and armed with a great resource, I started tweaking mixes to open up more flavor possibilities, such as the gluten-free lemon cake recipe I’m sharing below.

Rainbow Ice Box Cookies

I love sending treats to school with the kids at different times during the school year.

These fun rainbow cookies are great for St. Patrick’s Day or just for anytime!

To make the cookies, use your favorite sugar cookie dough and split it into 6 pieces.  The pieces don’t need to be equal in size…you’ll need more red than purple once you start stacking.

Planes Fire & Rescue Cake

Last week was Dude’s 7th birthday!  Since his birthday fell on a holiday, he invited a few of his classmates over for a movie party (and he took some amazing Hot Cocoa Cookies to school the next day!)

Originally, he was going to watch Planes with his friends, so we sent out the invitations.

Then, the week of his birthday, Hubs bought Planes Fire and Rescue , so he switched to that, along with a Fire & Rescue Cake.

And then the fun began!

First, to construct the cake, I made a double batch of my absolute favorite: Rich Chocolate Cake.  I baked it into two 8-inch square pans, a small batter bowl, and a 1-cup oven safe bowl (note – if using a batter bowl, place a greased flower nail in the bottom for even baking).

Fossil Cookies

As part of his Dinosaur/Volcano Birthday, Spud also asked for cookies!  Given the theme, fossil cookies seemed in order!

These are some of the easiest cookies you can make, plus the kids can help out!  Start off with some sugar cookie dough (I used the baking soda option on this recipe), cut it into circles and press little dinosaurs into each cookie (kids love this part!)

Then, just before baking, sprinkle each cookie lightly with cinnamon sugar.  Bake as directed and you’re done!  They’re easy and cute!
