Nerds Cupcakes {Cupcake Day}

It’s Cupcake Day!!

Today, a bunch of my blogging friends are all whipping up delicious cupcake recipes to kick your December off to a sweet start!

I thought about making some festive cupcakes, like my favorite Candy Cane Cupcakes or Snow Globe Cupcakes, but in the end, I went completely away from Christmas and raided the kids’ leftover Halloween candy to make these cupcakes instead.

Elsa Cake {Frozen}

I got to make my very first doll cake!!

When I was little, I remember my mom making doll cakes for my birthday, so I’ve always wanted to make one (difficult as a mother of boys!)

Lucky for me, my friend’s daughter requested an Elsa doll cake for her 4th birthday!

After spontaneously breaking out in “Let It Go” over the course of a week, it was time to get to work.

Here are a few Elsa process shots, as she gets a fondant mini dress and then a lovely Rich Chocolate Cake skirt.

Itsy Bitsy Spider Cake

I had no actual reason for making this cake except that I was really in a Halloween mood and wanted to make it! 

In fact, I baked it up the day before I went out of town and the whole thing went over to the neighbor’s house.

I played around with a red velvet cake recipe, since I wasn’t impressed last time I tried one.  I was also sure to use a “no taste” red food dye, which yielded much more pleasing insults, in my humble opinion.

This was my very first time making ganache, so it’s a little gloppy – I think I let it set just a hair too long before pouring, but the results were still delicious!

Everyday Monster Cookies for the #GoBoBakeSale

If you’ve spent much time around Amy’s Cooking Adventures, you know that I love any sort of cooking club or competition.

I’m also a big fan of mash ups.

So today, I’m sharing the cookies I made for the Go Bo Bake Sale and I’m participating in a challenge. 

The Go Bo Foundation was inspired by Bo, a 12 year old boy who fought bravely before succumbing to a rare type of leukemia.

Here’s a bit about the Go Bo! Foundation:

“Love each other, help each other, have your neighbor's back. If you see someone in need — even a stranger — reach out and help. This world can be a better place if we care and help each other.”
~ Bo Johnson

The Go Bo! Foundation has a three-tiered approach of assistance. They:

1.     Fund childhood cancer and related blood disorder research at the MACC Fund (Midwest Athletes Against Childhood Cancer, Inc.).

2.     Support state-of-the-art treatment in a child friendly environment at Children’s Hospital of Wisconsin (Dr. David Margolis was Bo’s doctor and he is a huge advocate and innovator in the field of childhood cancer).

3.     “Pay it forward” to families of children diagnosed with a life-threatening medical condition. Since most of the family’s energy is spent on their child, families often experience a financial crisis during this time. The Go Bo! Foundation’s goal is to assist in alleviating some of the financial worries by providing direct financial assistant (mortgage, rent, utilities, etc.). The assistance is not to be used for medical expenses, but rather to assist with the day-to-day bills.

Isn’t it a great cause?

Candy Corn Cupcakes

Ready for a cute Halloween treat?

Candy Corn Cupcakes!!!

They’re actually just a simple white cake tinted three different colors and decorated with candy corns – it doesn’t get much easier.

To make these, line 2 muffin tins with paper liners (24).  Take your favorite white cake mix (my favorite white for cupcakes is listed below) and use a small scoop (about 1 tablespoon) to drop some white batter into each muffin cup.

Next, tint all of the remaining cake batter yellow with gel food coloring.  Then, use the small scoop to add yellow batter directly on top of the white in each muffin cup.

Last, tint all of the remaining yellow batter orange with gel food coloring.  Split the orange batter evenly between the muffin cups, directly on top of the yellow batter.  Bake according to package directions and frost as desired, decorating with candy corns!  That’s it!

Broken Glass Cupcakes

As I was looking around Pinterest last year, I saw these cupcakes and knew that they absolutely had to happen!

I also knew that they were a bit to grizzly to make for my kids, but as luck would have it, I had a Halloween party to attend!

The cupcakes are my very favorite Rich Chocolate Cake frosted in white buttercream and dairy free chocolate frosting (tinted black).

Of course the most important and stunning feature of these cupcakes is the broken glass…or should I say sugar glass?

That’s right, that glass is made of sugar!  In fact, it’s that same stuff they use in movies and plays when someone breaks a pane of glass over another’s head! 

I’m not going to go in to a full tutorial on sugar glass, since this was my first time trying it, but I will tell you to absolutely NOT use the recipe from inspiration link up there…terrible, just terrible!  And complete waste of ingredients.

Limoncello Cupcakes with Blueberry Cream Cheese Frosting

A couple weekends ago, I got to bring cupcakes to the bridal shower of one of my college friends.

Her wedding colors are navy and green, but for the shower, the décor focused on navy.

I always think it’s always fun to have cocktail-inspired cupcakes at a bridal shower.  I still had some homemade Meyer Lemon Limoncello chilling in the freezer and I loved the idea of light lemony cupcakes for the shower!

Piña Colada Cake {with extra coconut!}

Two years ago, I made piña colada cupcakes.  Since I’m not a huge coconut fan, I highlighted the pineapple and let the coconut take the back seat.

But when a friend recently requested this cake for her birthday, her one request was, “don’t skimp on the coconut!”

Red Velvet Cake {Bioshock Infinite Cake}

Last week was a good friend’s birthday.

I thought pretty hard about how I wanted to decorate his cake.

I knew it had to be geeky.

Last year, the theme was The Dresden Files.

After a lot of hemming and hawing, I decided to make a Bioshock Infinite cake (if you’re unfamiliar, Bioshock Infinite is a video game).  I’ve never played Bioshock myself (I’m kind of a video game dunce), but I’ve watched Hubs play and heard him and Dan discuss the game…extensively!

Abstract Peacock Cake

When my in-laws were visiting last month, I made a birthday cake for my Mother-in-law.

I had full creative freedom on this one (that rarely happens!!)  So I searched through my Pinterest boards for my own inspiration!

I ended up choosing a pretty peacock cake (inspiration found here at Cake Central!)  I just love peacock feathers (in fact peacock feathers are a big part of my office décor!)

Chocolate Covered Banana Cupcakes

Sometimes it's fun to play with unusual cupcake flavor combinations!

I just love chocolate & bananas, so I decided to bring those two together in a cupcake!

The cupcake itself is reminiscent of banana bread, only lighter and a touch sweeter.

60th Birthday Golf Cake & Cookies

This year was my Dad’s 60th birthday!

For such a milestone birthday, I knew I needed to make a cake, even if I did need to transport it almost 300 miles!

And since his birthday gift from the family was a nice set of left handed golf clubs, I naturally decided to make a golf cake!

The Best Yellow Cake {Maroon & Silver Graduation Cake}

It’s graduation season!

This year, I had the pleasure of making a graduation cake (and cupcakes) for my neighbor.
The school colors were maroon and silver (hint: to make maroon, add a teeny tiny bit of blue and/or violet to red icing and to make silver, brush gray fondant with dry silver luster dust).

For the cake, I baked up 2 yellow cakes in 9x13 inch pans and frosted them in buttercream.

Slice of Heaven Cupcakes

These cupcakes that are so delicious, I had no other choice but to name them Slice of Heaven Cupcakes.  Because, well, you’re in heaven while you eat them!  The base of the cupcake is an über chocolaty cake that topped with a salted caramel buttercream that is absolutely over. the. top. 

Drizzle a bit more salted caramel and (why not?) top off with a superty delicious, salty-sweet Chocolate Covered Potato Chip!  You will seriously think you’ve died and gone to heaven!

Minimalist Star Wars Cookies

I don’t often like to tackle iconic characters in cookie form, but I just couldn’t resist some of my favorite Star Wars Characters!

I decided to strip them down and use a minimalist approach.

I used wet on wet icing for the effect as well, though if I were to do them again, I would probably allow for drying time and come back with the second layer.

My only regret is that I had some funky expansion with the cookie dough, so they aren’t perfectly rectangular!

Art Deco {Chocolate Kahula Cake}

This Art Deco inspired cake was made last year for Hubs & my combined 30th birthday parties.

We threw ourselves a Roaring 20’s Murder Mystery party (read all about it over at Amy’s Cooking Adventures), so we definitely needed a 1920’s style cake.  And since it was the prohibition era, I felt it needed to also be a super boozy cake. 

Therefore the Kahlua Cake was born!

The cake boasted equal punches of chocolate and coffee liqueur.  It was also very rich, so a little went a very long way!

Strawberry Cream Fudge

Would you believe that this is the first fudge I’ve ever made?

I made it as part of a very fun, pink and zebra themed 30th birthday party.

The fudge was so delicious and got rave reviews all night!  It was the perfect strawberry to vanilla fudge ratio and just melted in your mouth!

Mickey Mouse Birthday

For the second time this year, I got to make a Mickey Cake for my boys!  My older son (Dude) wanted a Mickey birthday just like his younger brother (Spud)!

Even though Spud is by far the bigger Mickey fan, Dude would not be swayed.  So we perused the internet and came up with our cake inspiration.

Strawberry Sour Cream Cake

Ok.  I’ve made strawberry cake again and again.  But when my son asked for strawberry cake for his birthday this year, I couldn’t resist playing with the recipe just one more time.

I’m so glad I did!!

This is THE strawberry cake recipe!  The sweetness of the strawberries (enhanced with strawberry Jell-o) is perfectly complemented with the slight tang of sour cream.

After all, my favorite cakes (White Almond Sour Cream & Rich Chocolate Cake) are both sour cream cakes!
