Elegant & Whimsical Cupcakes

My son’s teacher recently asked me to bake up some cupcakes for her granddaughter’s birthday.

Her granddaughter was turning 12 and entering into that stage where she doesn’t like frilly pink little girl things anymore.

So I decided to whip up some fun, more elegant and grown up cupcakes, but with a little flair!

The night before I made the cupcakes, I melted some neon green candy melts and lined a baking sheet with waxed paper.

Superman Cupcakes

Is there anything cuter than a little boy playing super heroes?

Nope, didn’t think so.

These Superman cupcakes are just perfect for any little boy (or girl!!) super hero!

To make these cupcakes, I make up a small amount of MM Fondant 3 days ahead of time and tinted it yellow and red.  I rolled out the red and then cut it with a large square cookie cutter (from this set).  Then I used the medium square cutter to remove the center of the red squares.  I used the same medium square to cut out the yellow.

TMNT Cookies

I got all caught up in girly cakes last week and nearly forgot to share Ninja Turtles part two – the cookies!!

The TMNT Cake was the of the birthday boy’s party, but he wanted to take some awesome themed cookies to school to share with his classmates!

The cookies were my Basic Sugar Cookie recipe decorated with Royal Icing.  They were cut using a floppy bunny cookie cutter with the ears cut off and moved to the side (prebaking).  Though in hindsight, some sort of fish or possibly balloon cookie cutter probably would have saved me some time!

Dairy-Free Chocolate Cake

Every once in a while, I get a request for a specialty cake.  Most often, the request is for a dairy free cake.

And since chocolate is one of the most popular cake flavors, it’s important to have a great dairy free chocolate cake.  Here is my favorite dairy free chocolate cake – because everyone needs to be able to enjoy a slice of chocolate cake!

Heros in a half shell TURTLE POWER!

When I was growing up, my bothers and I were huge Ninja Turtle fans.  We never really got into the live action films, but we loved the late 80’s/early 90’s animated TV series!

Since then, the turtles have faded from popularity, only to be reinvented and popular again!  So I was thrilled when I was asked to make a Ninja Turtle Cake and cookies for an 8th birthday party!

The cake my delicious Oreo Cake that had been covered in Marshmallow Fondant.

Basic Royal Icing Recipe

You can’t talk cookies without royal icing!

This is my go-to royal icing recipe.

And here’s a rundown of my work station during a cookie project.

I always decorate on wire racks.  I can easily move the cookies around as necessary, stack racks if I need to, and move all of the cookies quickly away from sticky little fingers!

Royal icing itself isn’t difficult, but there is a bit of a learning curve.  Click here for some of my earliest royal icing work.

From my experience, I can definitely tell you to invest in some good bottles  (I have these small ones and these larger ones) and practice, practice, practice!

And trust me, if you have any “uglies”, there is usually someone around to eat it no matter how it looks!

Basic Sugar Cookie Recipe

Everyone has a favorite sugar cookie recipe.

This recipe has all that delicious buttery, sugary flavor that I love about sugar cookies, but are firm enough (and hold their shape) for some wonderful decorating!

Recipe Notes
*This recipe makes a crunchier cookie that spreads very little while baking, so cookies maintain their shape.
*For chewier cookies, add in 1 tsp baking powder, but do know that the cookies will spread and “puff”.

Butterfly Cake

This post first appeared on my first blog, Amy's Cooking Adventures, in May 2012.

Last year, my good friend had her lovely daughter baptized.  The theme was butterflies and the colors were bright pink, navy, & white.

To match with the theme, I made the cake (and cupcakes) half white cake, and half (pink) cherry vanilla cake.  With some lovely butterflies swirling around a 3-tired cake, it was a real show stopper!
